I peeked into my produce drawer. Oops! I still have small cukes I bought last week at the farmers’ market. And look, I have a couple of avocados too. Hum…
Time to figure out a way to “use up” all of this lovely green nutrient-dense produce. But what should I make? More specifically, what do I “feel” like eating? Soup! But it’s summer, I tell myself. No problem, I’ll make a gazpacho of sorts.
Gazpacho is a cold soup make from raw veggies. According to Google, gazpacho originated in Spain and Portugal. And here I thought it was Mexican.
So cold soup it is. Below is the recipe I created to “empty” my fridge and create a lovely summer soup. Enjoy!
Cool-As-A-Cucumber Summer Soup
- 4 small or 1 medium/large English cucumber, chopped
- 1 avocado, peeled and chopped
- 1/2 small jalapeño, seeded and chopped
- small handful of parsley, chopped
- small handful of basil, chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon garlic-infused extra-virgin olive oil, or 1 garlic clove, peeled and chopped
- 1/2 teaspoon pink sea salt
- 1/4 teaspoon black pepper
- 3/4 cup water
- juice from 1/2 a lemon, optional if refrigerating
Put all of the ingredients into a high-speed blender jar. Blend until smooth and creamy.
If you want a thicker soup, add less water. Or a thinner soup, add more water.
Transfer soup to soup bowl, drizzle with avocado oil and garnish with a sprig of parsley or basil. Enjoy.
Add lemon juice, if you are going to refrigerator for eating later. Lemon juice will slow the oxidative discolouration of the avocado.
