1 can wild albacore tuna, drained
1 heritage carrot, grated
3 tablespoons green onions, sliced, white & light green parts
2 tablespoons unsweetened raisins
2 tablespoons fresh cilantro, chopped
1/3 cup Roasted Garlic Vegenaise Gourmet Dipping Sauce & Spread
1 tablespoon lemon juice, fresh
1/2 teaspoon curry powder, sweet
sea salt, to taste
fresh ground pepper, to taste
1-2 avocado, pitted
- Mix all ingredients in a medium bowl.
- Cut avocado in half and pit. Arrange on a plate.
- Scoop the tuna salad onto the plate with the avocado.
- Serve and enjoy!
Green onions are immature versions of regular red, yellow or white onions. They are picked when their flavour is the sweetest and their nutrients are at their peak. To top it off, they have all of the anti-inflammatory properties of mature onions; however, they contain higher levels of folate and vitamin C.
