Lentil Rice Casserole

This is a quick-to-assemble dish (5 minutes) and economical.  Lentils and brown rice mutually increase the protein value of the other making this dish a complete protein.


  • 3 cups chicken or beef broth
  • 3/4 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 3/4 cup onion, chopped
  • 1/2 tsp. basil leaves
  • 1/4 tsp. oregano leaves
  • 1/4 tsp. thyme leaves
  • 1/4 tsp. garlic powder


  1. Blend all ingredients together in a casserole dish.
  2. Bake covered at 300℉ for 2-2.5 hours until tender and the broth is absorbed.
  3. Serve with lightly steamed broccoli and cauliflower and a colourful tossed salad or coleslaw.
Optional: top with 3/4 cup cheddar cheese during the last 20 minutes and then before serving, stir the blended cheese into the casserole.
