Snow Day

That’s right, it is a snow day, as was yesterday!  I decided to be constructive and created a to-do list to tackle (way more on the list than was doable…crazy girl).

My first task was to try my new dehydrator.  But what to make?  I had cashews in the cupboard and some green onions that needed using.  Hum…I know!  Cashew Cream and Green Onion Kale Chips!  I love these flavours together.  Well, the dressings was very yummy and the end result…delicious.

When I soaked my cashews, I did way too many.  So I made some lovely vanilla cashew milk that I enjoyed for breakfast with my espresso (okay, I made a latte).  I still had 2 cups of soaked cashews, so I pulled out my yogurt maker.  That’s right.  I am fermenting Greek-style cashew yogurt.  If it turns out, I will post the results and recipe, of course.

I hope you enjoy your snow day or rain day or whatever kind of day it might be where you are.
